What Working the Truck Has Taught Us Lately



Some weeks on the truck feel loud. Orders stack up, the grill never cools, and time blurs into a rhythm of tickets, hands, and heat. Other weeks are quieter, slower, more reflective. Lately, it’s been a little of both.


Working the truck has reminded us how much consistency matters. People come back not just for a favorite dish, but for the feeling of knowing what they’re going to get. A solid plate. Food made with care. The same faces behind the window doing their best, even on long days.


It’s also taught us to stay flexible. Menus change. Ingredients change. Weather changes. Plans change. Learning to adapt without losing the heart of what we do has been one of the biggest lessons. Good food isn’t about perfection, it’s about paying attention and responding in real time.


We’ve been surprised by how much community shows up in small ways. A quick conversation at the window. A regular asking how the kids are. Someone trying something new because we suggested it. Those moments matter more than they probably realize.


And yes, it’s exhausting sometimes. There are early mornings, late nights, and days where the prep feels endless. But there’s also pride in doing honest work and watching it land where it’s supposed to.


Right now, we’re proud of the rhythm we’re finding. Proud of the food coming off the truck. Proud of the people who keep showing up for us, week after week.
